Since 2016 The Baked Dane has specialised in rustic Scandinavian inspired baked goods. Owner Lisa and her team are regulars at markets and specialty events around Horowhenua, Manawatu, and Wellington.
Their goods are always snapped up quickly and include a specialty range of crackers, including the best cracker in the world Knækbrød, and their moreish Rewena and Sourdough bread.
Lisa is always developing new products to expand their range with the Keto cracker and garlic rye chips being launched in 2019. She has even developed a new product during lock down to help us all bake bread at home! .
With Farmers Markets closed how are you selling your products?
We always sell online direct to customers, but Farmers Markets are a big part of our business. At the moment we are dispatching about 120 loaves of fresh bread a week. Mostly to online customers all around the country who have heard about us on Facebook or from friends.
We are definitely not selling as much produce as normally but it’s heart warming to see online orders from loyal market regulars coming through the website.
How are you keeping your staff safe?
The short answer is keeping them home! At The Baked Dane we are all a family and we all have young children to care for and look after, this comes first and always has!
That’s why it’s only one of my fantastic workers, Asha and I that are baking and packing the orders that are coming in. We feel safe doing this as Asha and I are in the same bubble, with her being my neighbour and us working out of our bakery located on my property. Our families and kids are very close so when the lockdown time came around we decided to bubble up together so we could still operate The Baked Dane, only have one person go to the supermarket for two families and the kids have kept each other entertained.
What are you doing for food safety?
Food safety is always important to us so not much needed changing besides the addition of face masks and gloves at all times. Products like bread that used to be on display in the open at farmers markets are all being packaged as soon as they are chilled.
Has this changed the way you operate?
Definitely! I am constantly trying to grow the online business by boosting our posts on social media.
Baking at night so we can ship fresh products in the morning.
With yeast being an item people have ripped of the shelves at supermarkets we have developed a Sourdough Kit so people can bake their own delicious bread at home, this is available to purchase on our website.
